Bosasa’s commitment to the provision of quality meals within budgetary requirements, has led to the demand of further services. The group has been asked to sponsor and provide meals to national governmental rallies and functions, scoped from 1 000 to 90 000 meals per day. In 1999, at the inaugural Siyanquoba Rally, 81 000 people were catered for in a single day.
The implementation of HACCP, ISO and stringent quality controls guarantee that Bosasa keeps abreast of changing markets and trends. A recent symposium, held by the Department of Correctional Services set the trend in re-establishing wholesome catering specifications. The focus included methods used for offender catering during incarceration.
In addition to all dietary requirements, the specifications also allowed for dealing with the growing effects of HIV/Aids in South African prisons. At the same time, menus were revamped, meal preparation techniques were improved and new concepts were promoted.
Since 2004, when Catering to Offenders by Bosasa originated, we have been able to apply a policy of zero defects. Our thorough approach has eliminated potential incidents relating to working in these high risk facilities.
Since being awarded the Department of Correctional Services facilities management contract (in 2004), BOSASA has served more than 400 million plates of food. We deliver services to the Department of Correctional Services in 8 management areas, servicing 32 facilities, which were implemented nationally on a single day, with seamless integration. These facilities have run successfully for the past 5 years (2004 - 2009).
Bosasa has successfully implemented the “Three Meal System” as prescribed by the Correctional Services Act. This requires 190 000 plates of food per day to be served in 4 hour intervals.
Stringent quality controls are maintained on all suppliers, and alternative suppliers are sourced for all commodities to ensure continuity of service delivery.
Because benchmarked expertise in catering lies central to Bosasa Full Facilities Management, integrated knowledge management systems support the delivery of a high number of nutritious meals per day.
Since 2004, to date, Bosasa has trained in excess of thirty thousand offenders for employment in the catering industry, supplying them with NQF and SAQA aligned training and course material through the Department of Correctional Services.
950 Department of Correctional Services members have also received specialized aligned training, courtesy of Bosasa, who also provides customised and SETA aligned courses and training materials for its own staff and clients. Its site-specific training modules address future needs in specialised and unique environments.
Bosasa’s qualified trainers are further qualified through the HTA school of culinary arts, who are members of the South African Chefs Association. The HTA School of Culinary Arts then assess all the offender trainees and certifies all the successful candidates as chefs. These offenders now have a credible qualification and are ready to be integrated into society through the JCT (Job Centre Trust) initiative.
A Kitchen Administration Software System (TrustMaster Catering Manager - developed by Bosasa subsidiary company ON-IT-1) ensures the delivery of day-to-day information on kitchen management for rapid decision making and risk management. By supplying a full spectrum of daily stock and financials, catering management for any environment, is in full control.
